This week, I made some vegetable stock to make some corn risotto for meal prep. Then I added chicken to make chicken stock. WIN-WIN.

KITCHEN HACK: Save your veggie scraps when you are preparing your meals. Vegetable Scraps = Tasty vegetable stock 😋

Use a freezer bag to collect your vegetable scraps. Let your bag fill up before making stock. All you need is:

- Larget pot

- Vegetable scraps

- Aromatics ( such as garlic, onions, herbs, spices)

- H20

- HOLD off on the salt until the end

This is all you gotta do:

  • Add your scraps to the pot and bring to a boil. Lower heat to simmer and slightly cover. Let the stock simmer for at least a couple of hours. The longer you let the stock simmer the deeper the flavor.

  • Drain your stock and remove any lingering bits in your stock.

  • Let stock cool before storing. You can store stock in ice cube trays or freezer bags.
