KITCHEN HACK: VEGETABLE STOCK
This week, I made some vegetable stock to make some corn risotto for meal prep. Then I added chicken to make chicken stock. WIN-WIN.
KITCHEN HACK: Save your veggie scraps when you are preparing your meals. Vegetable Scraps = Tasty vegetable stock 😋
Use a freezer bag to collect your vegetable scraps. Let your bag fill up before making stock. All you need is:
- Larget pot
- Vegetable scraps
- Aromatics ( such as garlic, onions, herbs, spices)
- HOLD off on the salt until the end
This is all you gotta do:
Add your scraps to the pot and bring to a boil. Lower heat to simmer and slightly cover. Let the stock simmer for at least a couple of hours. The longer you let the stock simmer the deeper the flavor.
Drain your stock and remove any lingering bits in your stock.
Let stock cool before storing. You can store stock in ice cube trays or freezer bags.
