Black Bean Burger

This quick, easy, and freezer friendly black bean burger will have you forgetting about meat.

Makes: 4 burgers

  • 1/4 cup sweet mini peppers, diced
  • 1/3 cup red onion, diced
  • 1 cup portabella mushrooms, diced
  • 1/2 carrot, diced
  • 1 can unsalted black beans, drained
  • 1 egg
  • 3/4 cups panko bread crumbs
  • 1 tbsp seasoning mix

    1. Blend the first 4 ingredients together in a food process or blender.
    2. In a medium bow, mash the black beans with a potato masher or fork until thick and pasty.
    3. Add the veggie mix, eggs, seasoning, and panko breads to mashed black beans. Mix until all ingredients are incorporated.
    4. Divide mixture into 4 patties (approx. 1/4 cup) and place them on wax paper. Freeze burgers at least for 30 minutes before cooking.
    5. Heat a lightly oiled skillet to medium heat and cook burgers 5-7 minutes on each side. If baking, set oven to 375 ° and bake for 7 minutes on each side on a lightly oiled baking sheet.
