Cauliflower Mac + Cheese
This is a twist on the traditional mac + cheese using cauliflower to add your cheese sauce.

Ingredients:
- 1 lb pipe rigate pasta
- 1 medium cauliflower, chopped
- 1/2 tsp seasoning blend
- 1 tsp extra virgin olive oil
- 2 cloves garlic, minced
- 1/2 medium red onion, diced
- 2 tbsp flour
- 1 cup half + half
- 1 cup veggie stock
- 3 springs of thyme
- 1 cup smoked white cheddar cheese, shredded
- 1 cup smoke gouda, shredded
- salt + pepper
- 1 tbsp bread crumbs
Instructions:
- Preheat oven to 420°. Bring 6 of salted water to a boil in large pot.
- Add pasta and cook for 9 minutes or until al dente. Drain pasta.
- Toss cauliflower, seasoning blend, and oil together. Place on lined sheet pan. Roast for 20 minutes or until brown. Turn oven down to 350.
- In same large pot over medium heat, add oil, onions, and garlic. Sauté for 2-3 minutes until translucent.
- Add flour and cook for 1 minute.
- Add half + half, veggie, and thyme stock to pot. Add cheese in small portions to the liquid until it is melted. Salt and pepper to taste.
- Add roasted cauliflower to cheese mixture. Blend a third of the mixture in the blender and add back to pot.
- Add the pasta to the mixture and mix together. Place in casserole dish. Bake for 20 minutes or until brown.
