Chicken Breakfast Sausage

Throw away the store bought patties,you will no longer need them. This recipe is quick, easy, and great for meal prep.

Makes: About 8 medium patties

  • 1 lb. ground chicken
  • 1/3 cup onion, chopped
  • 1/2 tbs seasoning blend
  • 1 tsp fennel
  • 1 tbs poultry seasoning
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/4 tsp allspice
  • 1/4 tsp salt
  • 1 tsp sage
  • 1/2 tsp olive oil, divided

  1. Heat half of the oil in medium pan over medium heat.
  2. Sauté onions and a pinch of seasoning blend in pan until they are soft. Remove from heat and let cool.
  3. In a small bowl, mix the spices together until combined.
  4. In a medium bowl, combine chicken, onions and 1 1/2 tbs of the sausage seasoning mix. Do not over mix.
  5. Shape into 8 patties (use 1/4 cup) or shape into smaller patties
  6. In a medium skillet on medium high heat, cook patties in pan with remaining oil. Cook 3-5 minutes on each side. Once you flip the patties, turn the heat down to medium.

TIP: You can also freeze these patties. After the patties have been shaped, place wax paper in between each patty. Place in a container and freeze for up to 30 days. Also you can save the extra sausage seasoning for later use.
