Vegan "Crab" Cakes

This simple and easy recipe uses jackfruit and white beans to create these crispy cakes. Jack fruit and great northern beans are combined to give the texture of "crab" meat.

Makes: About 6-8 cakes

Watermelon + Cucumber Drink

Cook time:

  • 1 can (20 oz.) young green jackfruit, drained and rinsed
  • 1 can (15 oz.) great northern beans, drained and rinsed
  • 1/3 cup celery
  • 1/3 cup sweet peppers (diced)
  • 1/3 cup red onion, diced
  • 1 cup panko bread crumbs
  • Juice of 1/2 lemon
  • 3/4 cup vegan mayo
  • 1 tbsp The Magic blend seasoning or all-purpose seasoning
  • 1 tsp old bay seasoning
  • 1 tsp dijon mustard
  • 1 tsp herbs (dill, parsley), chopped
  • Oil, for pan frying
  • Instructions:
    1. Bring water to a boil in medium size pot.
    2. While waiting for water to boil, mash up the great northern beans in a large bowl.
    3. Add jackfruit to the boiling water and cook for 10 minutes on a slow boil. Jackfruit should be fork tender.
    4. Combine the vegetables and mashed beans until well combined.
    5. Drain the jackfruit and mash it chunks. Let jackfruit cool down.
    6. Add the remaining ingredients and jackfruit to bowl and combine. Don't over mix.
    7. Form into cakes and refrigerate for at least 30 minutes.
    8. Heat oil in medium skillet over medium-high heat.
    9. Cook cakes about 3-4 minutes on each side until golden brown. Do NOT mash down the cakes.

    *TIP* Serve with slices of lemons or vegan garlic aioli.
